Who Says Vegetables Have To Be Boring?

Eat your veggies - especially your lettuce. But don’t confine yourself to iceberg lettuce or salads! Darker greens have about the same number of calories and carbs -very low! - but pack a lot more punch in the vitamins and other nutrient categories. By substituting radicchio, watercress, escarole or spinach for the iceberg lettuce, you add vitamin C, riboflavin’s, manganese and other essential vitamins that aren’t present in lettuce. Try them braised, steamed or grilled for something a little different from the usual salad.

Here are some recipes for greens that will tickle your taste buds and make your heart happy!

Wilted Spinach Salad:

The onions take on a natural sweetness that contrasts with the tangy yogurt and the bite of the spinach. A family favorite that’s low in calories and high in important nutrients.

Here’s what you need:

2 cups spinach leaves
1 medium onion peeled, sliced
2 tbs. olive oil
1/2 cup plain yogurt

Saut© onions in olive oil till transparent. Add spinach and toss in pan to coat with oil until leaves are barely wilted. Stir in yogurt while the spinach is still warm. Eat hot or cold. Only 50 calories per serving!

With this recipe, you’ll get: protein, calcium, vitamin c, manganese, iron, vitamin B12, vitamin A, selenium, magnesium, phosphorus, potassium, beta carotene, vitamin K, ALA

Grilled Radicchio:

Dijon mustard and Worcestershire sauce add spice to heart-healthy radicchio without adding much in the way of calories.

1 head radicchio
1 tbs. olive oil
1/4 cup balsamic vinegar
1 tbs. Dijon mustard
A splash of Worcestershire sauce

Combine all ingredients except radicchio in small bowl. Cut head of radicchio in 1/4 inch slices. Brush cut side with marinade mixture. Grill over hot coals till browned. Only 25 calories per serving!

Spinach, Mushroom & Anchovy Salad:

Anchovies are one of the best sources of omega 3 fatty acids AND they’re low in calories. Simple to fix and delicious for dinner, on its own, or with a bowl of chunky pasta.

6 cups spinach leaves, loosely packed
1 2 oz can anchovies in oil
10-12 small mushrooms
Juice of 1 lemon

Wash and dry spinach. Drain anchovy oil into saut© pan and warm. Add anchovies and gently stir over heat till anchovies are dissolved in oil. Slice mushrooms thickly and add to anchovy oil, saut©ing till browned. Add spinach, tossing with oil and anchovies till just wilted. Spritz with squeezed lemon. Only 50 calories per serving!

With this recipe, you’ll get: magnesium, phosphorus, potassium, vitamin A, vitamin E, foliate, vitamin K, beta carotene, niacin, thiamine, vitamin B6, vitamin B12, omega 3 fatty acids, riboflavin, and calcium

Walnut & Raisin Greens:

Get even more essential fatty acids and antioxidants in this great tasting warm salad.

6 cups greens, loosely packed (spinach, collard, turnip will all work well)
2 tbs. walnut oil
3 cloves garlic
1/2 cup raisins
1/4 cup chopped walnuts

Chop greens and place in shallow bowl. Heat walnut oil slowly over low heat. Mash garlic cloves and saut© in walnut oil till soft and browned. Add raisins and toss, and then add walnuts and heat through. Pour over greens and toss to coat well. Only 150 calories per serving!

Chop Till You Drop

You use it everyday in the Kitchen. If not looked after it can make you sick - And yet you probably never give it a second thought.

The Chopping Board is a large board you use in the kitchen for chopping, cutting and preparing food on.

When purchasing a new board, there are heaps of options to choose from - timber, glass, marble, plastic. And it can be a confusing choice.

Glass and Marble type cutting boards may look good but they play havoc on your knives. The hard surface will quickly blunt your knife and damage it’s edge.

So, keep your glass and marble boards for serving food only.

When it comes to wooden and plastic boards, even the experts are divided as to which is best. It comes down to personal preference. And mine is…. wooden.

Wooden boards are generally heavier and less inclined to slip. They are also more attractive and can be used to serve food at the table.

Where as plastic boards are lighter, come in various colors and are dishwasher safe.

Whichever type you choose, it is imperative you clean it well. Harmful bacteria can breed on your board and cause dreadful food poisoning.

So … be sure to scrub your board well after each use, with hot water and detergent. Then allow it to stand and drip dry. Your board should be completely dry before using again.

It’s a good idea to have more than one board, to avoid cross contamination. Have one for raw meat and one for other foods.

Or take it to the extreme and do what the professionals do. Use 5 different colored boards:-

Red - Raw Meats
Yellow - Poultry
Blue - Seafood
Green - Fruit and Vegetables
White - General

So, if you board is starting to look a bit worse for wear, then it is probably time for a new one. And now you will be well informed to choose the right one for you.

A Cookie Assembly Line: Efficient Cookie Baking for Busy Cooks

As a busy working mother, I’m short on time, especially during the holidays, but baking Christmas cookies is a family tradition I’m unwilling to give up. Over the years, I’ve come up with many ways to make the process of baking a large variety of cookies go much smoother and take less time out of my busy life. You may want to start by checking out my 6-day program for hassle-free Christmas cookie baking ( http://www.christmascookiesareforgiving.com/hassle-free.php ). In addition to the 6-step method, I’ve found an efficient way to prepare a large variety of cookie dough with minimum fuss by setting up a cookie assembly line. The best part about this process is that you can make 12 different batches of cookies and only have to wash the dishes once!

This process assumes that you have already chosen your recipes and gone grocery shopping. You will want to use your longest available expanse of countertop for this. My assembly line turns two corners as it winds around my small kitchen, but that is fine.

You may need to make some adjustments depending on your individual recipes, but for most recipes, you can set up your assembly line like so:

Flour Line:

-Large mixing bowl
-Measuring cups and spoons
-Fork for stirring
-Flour
-Baking powder and baking soda
-Salt
-Cocoa powder
-Spices
-Any other dry ingredients that are added to the flour in your recipes

Butter Line

-Another large mixing bowl (or the bowl from your stand mixer)
-A second set of measuring cups and spoons
-Electric mixer
-Wooden spoon
-Rubber spatula
-Butter, shortening, margarine and/or cream cheese
-Sugar (white and brown)
-Eggs
-Vanilla and other extracts
-Chunks such as raisins, nuts, chocolate chips
-Rolled oats
-Any other ingredients that are added to the butter and eggs in your recipes
-Plastic wrap
-Felt-tip marker

To avoid transferring flavors from one recipe to another, you will start with basic recipes that have no spices, chocolate, or other strongly flavored ingredients. Starting with your first recipe, go down the line measuring out the amount of flour, baking powder/soda and salt into one bowl. Then, combine the butter, sugar, eggs, vanilla in your larger bowl as directed. Gradually stir the flour mixture into the butter mixture. After that, stir in any chunks.

Next, scrape down the edges of the mixing bowl so that it’s fairly clean, shape the dough into a ball, and wrap it in plastic wrap. Identify the recipe by writing its name on the plastic wrap with a felt-tip marker, and refrigerate it. If it is a slice-and-bake refrigerator cookie, form it into a log instead of a ball, according to the directions in your recipe. If you plan to bake much later, you can even freeze the dough. Most cookie doughs freeze very well. Defrost at room temperature while still wrapped in plastic wrap, and unwrap only when dough is thoroughly defrosted. Otherwise condensation could add too much moisture to your dough.

When your first batch of dough is prepared, wrapped, and stored in the refrigerator or freezer, return to the beginning of your assembly line, without washing your dishes, and begin preparing the next batch of dough. When you have prepared all the recipes that contain no spices or cocoa, move on to the recipes that contain cocoa, and finally those that contain spices. This way, you will only have to do dishes once at the end of the process, and you will have several different kinds of dough waiting to be baked.

When all your dough is prepared, then you can finally put away all your ingredients, clean up the kitchen, and do your dishes. Now if you plan to finish your baking today, you’ll have lots of space for rolling out your dough or setting out your cooling racks. If you plan to bake another day, you’re done!

Blue Lobsters Are Real!

Lobsters are supposed to be red right? … Well, yes and no.

Most live american lobsters are naturally colored an olive green or mottled dark greenish brown. In rare cases, lobsters come in shades of bright blue, white (albino), yellow, black, and red have been reported from time to time. Perhaps the most unusual colors are the “half-and-half” lobsters with a line straight down their backs where the two colors meet.

The major pigment in a lobster’s shell, astaxanthin, is actually bright red in its free state; but in the lobster’s shell astaxanthin is chemically bound to proteins that change it to a greenish color. When lobsters are cooked, heat breaks down these bonds, freeing the astaxanthin so that it reverts to its normal red color.

So how does a lobster turn bright blue?
A genetic defect has been found that causes a blue lobster to produce an excessive amount of protein. The protein wraps around a small, red carotenoid molecule known as as astaxanthin. The two push together, forming a blue complex known as crustacyanin which often gives the lobster shell a bright blue color. About one in a million lobsters are blue, but when cooked, it turns red like the other lobsters.

It has been suggested that more than ‘one in a million’ lobsters born are blue, but many do not survive because their bright blue shell brings too much attention to themselves, making them a prime target for predators. Scientists also believe that blue lobsters tend to be more aggressive than their normal colored counterparts. Since they don’t easily blend in, they have adapted and changed to be more aggressive to protect themselves.

The blue lobster is truly another gift from Mother Nature that most people never see. Many professional lobstermen go through their whole lobstering career without catching or even seeing a blue lobster. Those that do have the privilege of catching one, are amazed and excited as it is seen as a once-in-a-lifetime event and feel a sense of awe when they experience seeing the strikingly beautiful blue lobster for the first time. Those that are caught are not normally eaten, but rather given to aquariums and educational institutions and kept on display in tanks for others to admire.
